Comfort Food || Cooking with turkey thighs
We've been experimenting this Autumn with lots slow cooking and oven to table dishes to make life easy, and the main ingredient is often turkey thighs - which interchanges very comfortably with lamb as well as chicken thighs in recipes. They are at their very best slow roasted so the meat just falls off the bone.
One of our favourite cookery writers for this is Diana Henry, who has a whole chapter devoted to chicken thighs in her book From the Oven to the Table, from simple suppers to dinner party stars, and these adapt really well to turkey thighs (if you double the cooking time). The above photo is turkey thighs with honey, plums and pomegranate, which is glamorously served with a pistachio relish. This Christmas we are really pleased to be offering turkey thighs and the drumsticks as separate products, in addition to being able to buy the whole leg.
